ALU BHUJIA
I am back with potatoes again.This time at the instance of my daughter,who likes only selected snack items came upto me and asked for alu bhujia.I believe and i’m afraid many of you agree with me making snacks at home is not only less expensive but also healthy as well.It requires patience and practice though.So when it was heavily raining here in Bangalore,i made this on a Saturday evening.You could make it bulk and store them.Stays crispy for 2 weeks.Assembling the ingredients let’s start to make this North Indian snack item.

- 2 potatoes Boiled -
- 1 cup Besan / Kadala Gram flour Maavu-
- 1/4 cup Rice flour -
- 1 tsp Garam masala powder-
- 1 tsp masala Chat powder-
- 1 tsp chilly Red powder-
- 1/4 tsp Turmeric powder-
- to taste Salt -
- Oil-to deep fry

- Boil potatoes in a pressure cooker and mash well.In a wide bowl add boiled potatoes, besan, rice flour, garam masala powder, chat masala powder, turmeric powder, red chilly powder, asafoetida and salt.
- Knead well to form a soft dough.If it is a little sticky add 1tsp oil and knead again.
- Heat oil well and take a big ball of dough in a omapodi acchu/press and directly squezee the mixture on to the hot oil.
- When done on one side flip it over and wait till the sound subsides.Drain in a paper tissue.
- Enjoy this crispy snack with your cuppa.
Notes
Add black salt if you want.
In place of potatoes you can add pureed palak leaves.
