Baingan Bhaja or Begun Bhaja is a Bengali dish where the big sized aubergines are sliced and marinated to give an exotic taste to the taste buds. Baingan or Brinjal has a unique taste and not a favorite of many. But if prepared in correct way,  this dish will be everyone’s favourite as it is shallow fried and  a lots of spices are added in to them. I have quite a lot of Brinjal recipes and this uses the big sized brinjal, which is used for Baingan Bhartha. It is fleshy and has a tasty flavor. In West Bengal, mustard oil is used predominantly, but since I don’t use it, I have use rice bran oil.You can use sunflower oil also. Also Bengalis serve this with rice which is truly delicious, but you can serve it with rotis or naan or serve it as a snack too. There are a lot of methods in making baingan bhaja. Some use rice flour, some wheat flour.Also some prefer deep frying, while I have shallow fried it, being a bit health conscious. I actually served it with rasam rice and it was heavenly. The time taken to prepare this recipe is also less and you have to wait for the marination time, that’s it. I wanted a bit spicy, so added red chilli powder a bit on the higher side, but suit your taste. Also some add garam masala , it’s up to you, you can choose to do whatever you like. Be sure to place the fried brinjal pieces , on a tissue paper, in case deep frying to remove excess oil. When you dust the brinjal roundels in rice flour before deep frying, a coat is formed on it’s surface and it turns crispy after shallow frying. It absorbs less oil as well. So try this recipe for dinner with rotis or rice, will you?

  1. Clean Brinjal in water and pat dry.
  2. Cut brinjal in roundels and place them in a bowl of water till use.
  3. In a bowl add garam masala powder,red chilli powder, Turmeric powder, dry mango powder and sat.
  4. Now take the brinjal slices and place them in the spice mixture.Coat well and marinate for 10 minutes.
  5. Now dust the marinated brinjal slices with rice flour one by one.
  6. In a tawa add oil an donce it gets heated place the brinjal pieces 4 or 5 at a time.
  7. Once cooked and roasted flip to the other side.
  8. Once done, serve as it is or as as a side dish with ritis or rice.
Recipe Notes

Use red chilli powder as per your taste.

Adding dry mango powder adds a nice twist to the recipe.

You can place the fried brinjal pieces on a tissue to remove excess oil.
