  1. Clean mango ginger and pat dry and spread on a plate.
  2. Peel of the skin cleanly.
  3. Chop and place in a blender.
  4. Grind into a fine paste.
  5. In a pan add sesame oil and add mustard seeds to crackle.
  6. Add asafoetida.
  7. Add ground mango ginger paste.
  8. Add red chilli powder,turmeric powder and fenugreek powder.
  9. Add salt and mix evenly.
  10. Cook till oil leaves the sides of the pan.
  11. Delicious Mango Ginger Thokku is ready.Enjoy with curd rice or rotis or almost anything.

Notes

You can add a teaspoon of grated jaggery while adding mango ginger paste.

You can dry roast fenugreek seeds and powder and add to the mixture.I used store bought fenugreek powder.
