Instructions
  1. In a pan dry roast all the ingredients given in the to roast and grind table.
  2. Transfer it to a blender.
  3. Powder the roasted ingredients.
  4. In a pan add oil ,mustard,urad dal and cashews.
  5. Once they have crackled and dal and cahews turn brown,add chopped onion and curry leaves.
  6. After onion has turned pink,add chopped brinjals.
  7. Add red chilli powder and turmeric powder.
  8. Fry a bit.
  9. Add now salt and roast and ground powder.
  10. Wait till the spices are cooked and oil leaves the sides.
  11. Cook rice and cool it.
  12. Add the brinjal spice mixture.
  13. Mix well.
  14. Vangi Bath or Brinjal Rice is ready.

  • You can temper with ghee for additional taste.
  • You can use round purple brinjal,long purple brinjal or round green brinjal.
  • If you want more spicy add more chillies in the powder.
