BOONDI LADOO
It is Diwali season and time to make, eat and share sweets and snacks to all and how could i forget my blogger friends?So as i was wondering what to make for a sweet this traditional boondi ladoo came to mind.It was a regular and compulsory sweet without which our Diwali was incomplete during childhood days.Mom is an expert in making these and as she and dad are visiting me this Diwali i wanted to try this badly.Here comes the recipe of boondi ladoo.an easy way.

Ingredients
- 1 1/2 cup Besan / Gram flour / Kadala maavu
- 2 - 2 1/2 cups Sugar
- 2 pinches Elachi / Cardamon powder
- 1 pinch Baking soda
- 1 pinch Yellow food colour
- a few Cashewnuts
- a few Raisins
- 2 tsp Sugar candy/Diamond kalkandu
- 6 Cloves
- Oil to deep fry
- 1/2 cup Water

Instructions
- In a vessel add Besan/Gram flour,baking soda,yellow and food colour.
- Mix well with water without lumps.
- The batteru2019s consistency should be like this.
- Heat oil in kadai and with the help of a perforated laddle and start tapping.Slowly the boondis will start falling on the oil.When it is three fourth cooked take them out and place them in a vessel.we don't want crisp boondis here.
- Meanwhile make a sugar syrup with sugar and water.In a vessel add sugar and water till it is evenly mixed.Make a one string consistency and you can do this by dipping your index finger and thumb so that it forms a one string.
- Once it reaches the one string consistency add cardamom powder.Sugar syrup is ready.
- Now transfer the fried boondis on the syrup and repeat the boondi frying process by wiping the back side of the laddle to ensure making round boondis. Also fry cashews and raisins and add to the sugar syrup boondi mixture.
- Also add sugar candy and cloves.
- Make ladoos while the sugar syrup is still warm.Allow it to cool.
- Store in an air tight box.
- Enjoy boondi ladoos for Diwali this year and treat your loved ones.

Notes
- Do take care and fry boondis in hot oil.
- Adding food colour is purely your choice,you can avoid it too
- Addition of rose essence also imparts a unique taste and aroma.
