CARROT HALWA/GAJAR KA HALWA

Carrot Halwa or Gajar ka Halwa is also known as Gajrela is a sweet dessert pudding mainly associated with North of India.It is made during Diwali, Holi and family celebrations.Many people make it in different methods,either with pressure cooker,microwave or in an open pan which is slow cooked with grated carrots in milk and dry fruits.Almost everyone is addicted to this sweet delicacy and requires no reason to prepare and enjoy.I also made this just for the sake of blogging,but the enjoyment came along the way.As a blogger trying out new recipes and taking pictures is a weekly affair,if not daily.This is a long pending post which i made during last winter,when delhi carrots were in season.

Among various methods of preparation,this involves either addition of condensed milk or khoya. Both methods taste great,but i have used full cream milk and cooked it in an open pan which gave an unusual creamy texture to the halwa. Carrot halwa can be served chilled or hot.If serving hot serve it with vanilla ice cream,a combo made in heaven.It is really surprising with a very few ingredients this dessert could taste so delicious.So why wait for any occasion?Spring into the kitchen and try out this yummylicious treat for your loved ones..

Instructions
  1. Grate carrots finely.
  2. In a pan add a teaspoon of ghee and carrots.
  3. Let it cook for a while.
  4. Once the moisture is absorbed add full cream milk.
  5. Add sugar and mix well.
  6. Once the sugar amalgamates and completely absorbed with the carrots it means the carrots are cooked.After addition of sugar the mixture will turn watery,wait till it absorbed well.
  7. Add more ghee,cardamom powder and garnish with cashew nuts and pistachios.
  8. Carrot Halwa or Gajar Ka Halwa is ready for serving.

Notes

You can add khova or milkmaid in place of milk.

You can also add badam or any other dry fruit of your choice.

Addition saffron strands also enhances the flavour.

Use orange or red carrot whichever is available.
