GARLIC NAAN
I made Garlic Naan sometime back for the first time.I have never tried this recipe and wanted to try it after we tried it at a nearby restaurant. It was very flavorful and fluffy in the middle.Hoping to incorporate the same in my kitchen I set out t make these delectable type of bread on stove top as I don’t have tandoor at home.Usually naan is made with all purpose flour or maida but owing to the health benefits of wheat you can make it with wheat flour only or half of both each mixed.In Punjabi households tandoor is a part of their kitchen quintessentials and usually placed in the backyard of their homes.It is called Sanja Chullah and it becomes a community affair to them to make and feed people at all times.My friend who is a Punjabi tells me that no one is left khali pet i.e. empty stomach if they visit their house.Of course we Indians are known for cooking skills and feeding generously also,is it not?The clay ovens are also widely used in Hotels which give an unique taste to naans and makes them super soft and fluffy.
The other point to be noted that I have used yeast here for that soft and delicious flavor. You can add milk or curd for kneading purpose in place of water as it imparts a delectable taste.Do not over knead the dough and handle the dough with care.This super tasty recipe is of Persian and Mughlai origin. You must have seen in the roadside dhabas making these naans with no difficulty.You can try the same in your home with equal ease this easy recipe which can be made quickly too. - 1 cup maida
- 1/2 tsp baking powder
- 3 tsp curd
- 1/2 tsp sugar
- 1/2 tsp Active Dry Yeast
- to taste salt
- 1/8 cup milk
- 2 Flakes Garlic(grated)
- 2 tsp Oil
- 2 tsp Nigella Seeds
- 2 tsp coriander leaves

- Soak active dry yeast in lukewarm water.
- Mix well.Keep it aside for 10 minutes.It will become cloudy.
- In a bowl add maida, salt, sugar, oil,grated garlic,yeast mixture and baking powder.You can replace water with milk or curd.
- Knead well and keep it for resting for an hour.
- Roll into lemon sized balls.
- Dust some flour on the rolling surface.Add nigella seeds and chopped coriander and place the flour dough and press it to flatten it.
- Roll it and place in a hot tawa smeared with butter.
- Flip to the other side.
- Delicious Garlic Naan is ready to enjoy.
Always use lukewarm water to dissolve yeast.
Knead with patience and don't over knead also.
Adding sugar gives a nice colour to naan.
