KHOYA BURFI/DIWALI SWEETS
Khoya or solidified milk is an excellent source to many sweets.We can make many delicacies with khoya and this one a burfi with the same is a easy to make and a good option to try out for this diwali.This recipe can be made very quickly and is rich in flavour.I got a first taste of this sweet in a function held sometime back and learnt this recipe from my friend who had made that.This can be helpful to those readers with last minute preparations of the upcoming Diwali festivities.So if you are planning to please your family and friends with a fast yet,royal treat do try out this sweet and win accolades.

- 1/2 cup sugar
- 2 tsp ghee
- a few Pistachios

Instructions
- Bring khoya to room temperature and crumble it.
- Chop pistachios and set aside.
- In a heavy bottomed pan add ghee and add khoya.Mix well till it changes colour.
- Now add sugar.
- After 10 minutes of roasting,the sugar and khoya mixture would have amalgamated well and when the whole mass leaves the sides of the pan,switch off the flame.
- Transfer it to a greased plate.
- Add chopped pistachios on top and once cooled completely cut into squares.
- The piece would be as shown.
- Enjoy Khoya Burfi.You can store this in fridge for about 10 days.

Notes
- Traditionally pista is added as a garnish.But you can add any nuts of your choice.
- Even after switching off the flame,the sweet mixture will not be of totally solid mass.It will be goey and chewy after cutting into squares.
- Use unsweetened khoya of any available brand.
