MANGO GINGER THOKKU
Mango Ginger Thokku is an aromatic and delicious pickle variety with mango ginger.Mango Ginger is neither related to mango nor ginger but to turmeric.It is a rhizome which gives a sweet smell of unripened mango when crushed.It tastes and smells predominantly of ginger with a faint taste of mango.Usually I have bought pickle from the grocery with this mango ginger but have never attempted to try.Last month when i had gone to purchase my weekly groceries,I saw the market loaded with these mango ginger and was tempted to try this out.A little bit of this aids digestion.cures asthma,bronchitis,cough etc.
I have two thokku variety pickles in my blog.One is gooseberry thokku and the other is mango thokku.I also learnt later that you can make a wide range of side dishes from mango ginger like chutneys,sorbet and even mousse.The list would be endless.As a blogger I try out new recipes and add them up t my blog and share with you all.This turned out to be a great hit at home and I had to make a second batch for the demanding bellies.You can also try another version of simpling chopping these and mixing with salt,chilles and lime juice.Tastes divine.

- 1 cup Mango Ginger -(chopped)
- Mustard -1/2 tsp
- 3 tsps Red Chilli Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Fenugreek Powder
- 1/2 tsp Asafoetida
- 1 tbsp Sesame Oil
- to taste Salt

- Clean mango ginger and pat dry and spread on a plate.
- Peel of the skin cleanly.
- Chop and place in a blender.
- Grind into a fine paste.
- In a pan add sesame oil and add mustard seeds to crackle.
- Add asafoetida.
- Add ground mango ginger paste.
- Add red chilli powder,turmeric powder and fenugreek powder.
- Add salt and mix evenly.
- Cook till oil leaves the sides of the pan.
- Delicious Mango Ginger Thokku is ready.Enjoy with curd rice or rotis or almost anything.
Notes
You can add a teaspoon of grated jaggery while adding mango ginger paste.
You can dry roast fenugreek seeds and powder and add to the mixture.I used store bought fenugreek powder.
Always use sesame oil for pickle making.
