PAL PAYASAM
A traditional South Indian dessert made during festivities at homes,Pal Payasam is a milk based sweet. Simple to make and pleasing to eat and serve.It is a must in most functions in Tamil and Kerala households.Lord Guruvayurappan is said to be fond of this delicacy.So friends,here is the recipe.Enjoy making,eating and serving.

Ingredients
- 1 litre milk
- 2 1/2 tsps basmati rice
- 1/2 cup sugar
- 1/2 tsp Condensed Milk
- 1 tsp NUTS of your choice(cashews and raisins)
- 1 tsp ghee
- 1/4 tsp cardamom

Instructions
- Heat the ghee in a pan.
- Now add the chopped nuts and keep them aside.
- Add rice now and saute it for 2mins.
- Add milk now and let it boil and keep on stirring.
- It is preferable to use a non stick pan so that the milk doesn't stick to the bottom.
- When the rice is cooked,add sugar and cook until the mixture is reduced to half.
- Add the condensed milk and mix it well and check for the desired consistency.
- Now add cardamom powder and garnish it with chopped nuts.
- Pal payasam is ready.
- Serve it hot or cold as you please.
Recipe Notes
NOTES:
I have used basmati rice,but you can use ordinary cooking rice as well.
Using cream milk will enhance the flavour of the dish
In case you are in a hurry in making this you can coarsely grind the rice and follow the steps as above.
