PANCHARATNA DOSA
Long back I had a chance to eat at a quaint little place in Madurai during our temple visit to the city.They served this unusual variety of dosa which was quite a hit there.I being the one who likes to experiment with food found an instant attraction to the dosa and ordered immediately.It turned out to be crispy and soft and we all thoroughly enjoyed it.I had totally forgotten the recipe and it’s name until 2 months back I had this opportunity.

One of the leading Tamil magazine Kungumam Thozhi asked me to contribue to their magazine a set of 30 recipes under the heading dals.As I was searching for the recipes with dal,I remembered this dosa and instantly made it. I searched for the recipe in google and found out this simple recipe which can be made as a change to the regular dosas.Since it has five dals in it it is called Pacharatna Dosa.As you would see it involves easy preparation method and can be had for a filling breakfast or had for dinner too.
- Assemble all ingredients.
- Soak all the dals and rice in water seperately for 4 hours.
- After 4 hours take the dals in a blender.
- Grind to a smooth paste.
- Now take the soaked rice in a blender.
- Grind it to a smooth paste too.
- Transfer both dal and rice mixture to a large bowl.
- Add salt and mix well.Allow it to ferment for 8 hours.
- After 8 hours mix the batter well and it is ready for use.
- In a tawa drizzle some oil and slowly start making dosa.
- After it is cooked on one side flip on the other side.
- Pancharatna Dosa is ready to be served.I had with Onion Sambhar.
Notes
You can add green gram dal or black channa too while soaking dals.
Addition of half an inch of ginger whlle grinding ensures better digestion.
Unlike adai grind the batter smoothly.
You can also compliment this with any chutney.
