PANEER JALFREZI/PANEER RECIPES/SIDE DISH FOR ROTIS
Me and my hubby are not a big fan of paneer,but daughter dear loves it to the core.So whenever we go out to eat she would order one paneerrecipe.We had this paneer jalfrezi in a restaurant close to home called 1947.I had no clue of it’s taste but when it did came I found myself enjoying it with roomali rotis.So when Dhivya asked me to make that last week,I couldn’t resist myself in taking pictures as it was very colourful and a good balance of vegetables,paneer and spices.Paneer is always heathy,specially for kids as it has calcium and vitamin D.So whenever I get a chance make some paneer recipes for my daughter.So why don’t you try out this recipe which can be made very simple by proper planning.You can chop the vegetables and paneer in advance and the rest of the work is simple.See down below the recipe of paneer jalfrezi and treat your family and friends with yet another delectable recipe from my kitchen…

- 200 gms paneer
- 1 carrot (cut into juiliennes)
- 5 Beans
- 2 tomato
- 1 capsicum
- 1 onion
- 1 tsp red chilli Powder
- 1/2 tsp coriander Powder
- 1/2 tsp garam masala
- 1 tsp ginger (grated)
- 1/2 tsp turmeric Powder
- to taste salt
- 1/2 tsp Cumin Seeds
- 1 tsp lemon juice
- coriander leaves to garnish
- 1/2 tsp methi Kasoori (crushed)

- Cut all the vegetables into juiliennes.
- Cut paneer and keep aside.
- In a pan add oil and jeera.Once it splutters add grated ginger and onion.
- When it turns,add red chilly powder,coriander power,turmeric powder and garam masala powder.
- Take one chopped tomato and put in a blender .
- Puree it.
- Add it to the onion mixture.
- Fry till moisture is absorbed.
- Take all veggies in a vessel and adding water parboil them.
- Once done strain it.
- Add it to the onion mixture.
- Mix well and add now salt and kasoori methi.
- Add paneer cubes.
- Mix well.
- Squeeze lemon.
- Garnish with coriander leaves.
- Enjoy Paneer Jalfrezi with hot rotis.
Notes
- You can add baby corn,red and yellow capsicum also.
- Addition of tomato ketchup while sauteing is another variation,I didn’t add,but it gives nice red colour.
- Kasoori methi is dried fenugreek leaves and it imparts a nice aroma to the dish.
