POTATO GNOCCHI
Potato Gnocchi is an Italian delightful pasta. Loaded with Italian herbs and sauce of our choice it is an awesome treat for your taste buds. The potato dumplings are of pillowy texture and fried to perfection with tasty sauces.The cheese adds a nice twist and improves the taste. With available ingredients a little muscle of yours to work you can create a wonderful recipe. I have made this with white sauce, but can try with tomato or pesto sauce as well. This can grace any occasion and will be the star attraction in your menu, if you are throwing a party. My daughter is very fond of Italian food and it was she who made be do this and helped a lot in the whole process of creating this recipe.
Some add eggs to the dough, but being a strict vegetarian I have avoided it. Regarding cheese you can add any variety of your choice tough parmesan cheese tastes best. Also I have made this with homemade White Pasta Sauce, but you can make this from my blog or can buy store bought one. The original recipe calls for baking the potatoes, but I made this easier and quicker by boiling them followed by mashing and mixing and later boiling them again. The recipe was very easier than I thought and I want to make the tomato sauce version soon. And yes, If you thick this would be heavy or make you fat then you are wrong. This is soft, melt in the mouth and super fluffy. Potatoes also contain starch that your body needs and thiamine too. So to please your family try this exciting recipe with creamy cheese and added Italian herbs. They will fancy this and be proud of your achievement in International cuisine.

- 4 number Potatoes
- 1/4 cup Cheese (Grated)
- 1/4 cup maida
- 1/4 cup White Pasta Sauce
- 1/2 tsp Black Pepper Powder
- 1 tsp butter
- 1 tsp Oil
- To Taste salt
Ingredients

- Boil potatoes.
- Peel and mash them.
- Add maida.
- Add salt.
- Add butter and black pepper powder.
- Add oil.
- Make a soft and smooth dough.
- Make small balls out of the dough.
- Flatten each ball and make an impression at one end as shown.
- Similarly make all gnocchi balls and keep them ready.
- Boil water.
- Add the gnocchis.
- Cook till done.
- Remove once cooked.
- Allow it to cool.
- In a pan add oil and ad cooked gnocchis.
- Add white pasta sauce.
- Mix well.
- Ensure all gnocchi balls are coated with sauce.
- Serve hot.
You can make pesto sauce and try out this gnocchi. The pesto can be either coriander based or basil based with walnuts or almonds.
Olive oil can be used to enhance flavour.
You can add chilli flakes on top while garnishing.
