SHAHI PULAO
I have been cooking varieties of Pulao’s lately. My Daughter’s college has re-opened and it’s a tricky discussion at times what to prepare for lunch box. So, as I was scrolling the other day, what to do for my day’s menu, I stumbled upon a satvic recipe which is free of onions and garlic too and yet highly attractive to the eyes. So I set to cook this tasty pulao dish using my favorite rice brand Kohinoor Authentic Basmati Rice. As a matter of fact, this was very easy and highly tasty too. Because Kohinoor Authentic Basmati Rice is a traditional & authentic variety of Basmati Rice which is naturally aged for 24 months and matured to perfection for its pearl look, soft feel and sweet aroma. Because Kohinoor brand has long grains and their rice is highly aromatic and flavorful. The recipe was a quick make with the available ingredients at home, and my lunch problem got solved.
I served it with a dal based gravy and Anar raita. While coming back from college, my daughter was all in praises for the lunch and asked me to make some more the following day too for her friends. The joys of feeding your kids is highly pleasing and satisfactory. As I enjoy cooking, I agreed and will have to make this Shahi Pulao once again.

- 1 cup basmati rice Kohinoor Authentic
- 1 capsicum
- a handful Green Peas
- 6 Beans
- 6 Cashew Nuts
- 6 Raisins
- 1/2 tsp jeera Shahi
- 2 tsps ghee
- 1 green chilli
- 1/2 tsp lemon juice
- coriander leaves -for garnishing
- to taste salt
Ingredients

- Soak rice in 2 cups of water for half an hour. Cook till grains are separate and cool down.
- In a pan add ghee and fry cashew nuts and raisins. Keep aside for later use.
- In the same pan add ghee followed by shahi jeera. Also add bay leaf,cinnamon stick, clove and green chilli.
- Add chopped beans, capsicum and peas.
- Cook till soft.
- Add cooked rice, salt,cashews and raisins.
- Add lemon juice.
- Garnish with coriander leaves and serve.
- May serve with Anar Raitha.
Notes
You may add onions while sauteeing,but since I was following satvic method,I did not add.
You can add any nuts of your choice.
You can add saffron strands soaked in milk while cooking rice.
If you want add cut cubes of paneer along with vegetables.
